Oooooh, these are GOOD! In my area, I can find grass-fed lamb chops at Trader Joe’s (yes!) and at Whole Foods Market. I’ll make this about once a week to twice a month at least–everyone loves it and its so easy. I always try to buy grass-fed red meat if it’s available. It’s so much healthier and I want my family to eat the best food possible! I show my love through cooking. How do you show yours?
Garlic Rosemary Grass-fed Lamb Chops
1 package grass-fed lamb chops, about 5 chops
3-5 garlic cloves–I use a lot! The more the merrier!–chopped fine
1 tablespoon fresh organic rosemary, chopped
1 tablespoon sea salt (I like it on the saltier side. You can use 1/2 tablespoon or 3/4 and add more later if you’d like. DO NOT use table salt).
1/4 cup organic extra virgin olive oil
Preheat oven to 400F. In a small bowl, mix the olive oil, rosemary, garlic, and salt. Take lamb chops out of the fridge and cover both sides with marinade. Let sit out on counter for 30 minutes.
Heat an oven-proof pan over high heat until pipping hot. Put chops in and turn down to medium heat. Cook on that side for 2 minutes. Then, flip over and finish in the oven for 10 minutes. They will be perfect! A little pink on the inside, a good medium.
Let rest for 10 minutes before serving. Enjoy!
