Fresh Summer Tomato Sauce

Fresh Summer Tomato SauceĀ 


2lbs fresh organic ripe plum tomatoes (or you can use 2 cups canned tomatoes in juices, or even a whole 32oz can–I plan on using 3lb of fresh tomatoes next time!)

1 white onion, peeled and cut in half

5 tablespoons butter (I used grass-fed, salted. I’m sure you could try vegan butter!)

salt to taste (I used 1 teaspoon celtic sea salt–the saltiness was PERFECT for me! You may want less)


{Peel your tomatoes if using fresh (not canned). Method: boil a pot of water. place tomatoes in boiling water for about one minute, then remove to a bowl to cool. I put the bowl in the fridge for about 10 minutes to accelerate the cooling process! Once cool to the touch, peel and chop. Discard the peels.}

Place tomatoes, onion, salt, and butter in a medium sauce pan and bring to a boil uncovered. Lower the heat to low and gently simmer for 45 minutes, stirring occasionally and breaking up any large tomato pieces with the back of your wooden spoon. You can save the onion for another use, or put it in your pasta! I did and was so glad. It was amazing.

Enjoy over pasta (gluten free or otherwise), polenta, zucchini pasta, or just eat with a spoon!
