Flourless (3-ingredient!) Peanut Butter Cookies {gluten free, dairy free!}

We’ve had so many changes over the last few months, including having to hire our 3rd nanny in 3 months. Who knew it would be so difficult to find quality care for our sweet little love? We had our newest nanny, an older woman with grandchildren of her own, start today. I already like her a lot.  She’s Ukrainian and loves to cook! When the topic of Borsht (beet soup) came up, which I’ve never actually had, she said, “I make for you.” Love.

I’ve been really struggling with an almond flour shortbread cookie the last few weeks (when I have time to cook, which is next to never). I’ve now made 3 batches and am not satisfied, so I decided to try one of those super easy recipe videos that my Facebook friends always share! It was a hit. Always a peanut butter fan, these are yummy and crazy easy.

Flourless (3-ingredient!) Peanut Butter Cookies {gluten free, dairy free}


1 cup creamy peanut butter (I used Jiff—not sure if natural would work!)

1 cup granulated sugar

1 egg  


Preheat your oven to 350F and mix the ingredients with an electric mixer until smooth, about a minute. Using a tablespoon to measure, scoop out dough and roll into balls with your hands. Place on a cookie sheet lined with parchment paper. Take a small fork and make indentations like a cross. Bake for 8-10 minutes! This probably made around a dozen or so…maybe more…I’m not sure! By the time I thought to count, I had eaten too many to be sure. J

These are really great!! Here are some more options for next round:

Add some mini chocolate chips or peanut butter chips!  

Use brown sugar instead?

Use Nutella instead? Make dairy free version? Hmmm…

Add a touch of vanilla extract?

Add chopped nuts or use chunky peanut butter?

Maybe try almond butter?
