{Paleo, Vegan} 3-Ingredient Skinny Mocha Smoothie

My first week back at work was wonderful! Granted, I only taught for 2 days, but those two days felt incredible! There is something magical about getting up early to get to a job I love, feeling a good sort of exhaustion when I am done, and then enjoying my evening at home with my little family before getting up and doing it all again the next day. I feel I have purpose, and that is like gold.

I made a promise to myself that I would still continue my meditation practice every day before school; however, I gave myself some leeway the first two days. What I did do, though, was a mindfulness meditation practice on the way to school! I used an app called Buddhify, which allows me to practice mindfulness when doing many common activities. I’ve been using the traveling option, but there are also options for when you are exercising, walking in nature, working online, eating, waiting around, and more! It has been nice to use some of my commute time to lower my stress, become more grounded, and to notice the little things around me that seem to blur in the distance when I’m wrapped up in being the opposite of mindful, when I’m being mind-less—so focused on things beyond my control or experiencing racing thoughts that serve no purpose (that always happens when I’m stressed or excited, or both). It is a nice, gentle reminder every day to remain present and aware. My next step is to include a morning meditation session before I’ve left the house, and to include another one when I get home in the evening. Although when we feel overwhelmed and busy there seems to be no time for such luxuries, I remind myself that it is only 20 minutes and it is so incredibly important for my health—it’s a priority, before online shopping, anyway. :)

I like to get up very early in the morning and get to work at least 1 hour to 90 minutes before school starts, just to be in my space and prepare for the day. I drink my amazing locally roasted coffee in the morning (*cough* coffee snob *cough*), but in the afternoon I often feel I need a little pick-me-up, a cold one at that. This smoothie fits the bill! There is no sugar added, it is rich and creamy, full of chocolaty coffee flavor, and it is Paleo and vegan! It is a sweet treat that feels like an indulgence, but it is actually quite healthy. As I drink it, I practice mindfulness again. I pay attention to how it smells, tastes, feels, looks, and makes me feel. It is a little escape into coffee mindfulness heaven—perfection in a glass.

{Paleo, Vegan} 3-Ingredient Skinny Mocha Smoothie

Serves 1

1 large sliced frozen banana

1 heaping teaspoon instant coffee granules (I got mine at Trader Joe’s!)

2/3 cup milk of choice (I used canned light coconut milk from Trader Joe’s!)

Instructions:

Throw all ingredients into your blender, and blend until combined! If too thick for your liking, add more milk until you reach your desired consistency.

Optional add-ins:

Handful chocolate chips, cacao nibs, nuts/seeds, shredded coconut

1 tablespoon coconut butter or oil

1 tablespoon cocoa powder

1 tablespoon peanut butter (not Paleo), almond butter, or cashew butter
