{Melt in Your Mouth, Incredibly Easy} Crockpot BBQ Ribs

On a hot day, when you don’t want to run your oven or stand over a hot stove, Crockpot recipes are a must! Over spring break we had beautiful weather—one day was almost 100. It was a beautiful week off! Just getting that little taste of summer is enough to give me the fuel I need to end this school year strong—I hope. We were planning on going to Bend, Oregon this summer for a month, as Colin was (up until 2 weeks ago) an entrepreneur. Now, after starting a new and exciting job at a local tech company, we will have to settle with traveling to 2 weddings this summer. One is in Vancouver, and one is in Wisconsin! I’ve never been to either, and with 1 week at each place, it should be really fun! I’ve heard that Vancouver is filled with locally roasted coffee places, gluten free options, and yoga studios. If this is the case, I think I’ll be in heaven.

{Melt in your Mouth, Incredibly Easy} Crockpot Ribs

Serves 2-8 (we like to have ½ a rack each with a light side)

1-2 racks of ribs (I got pork ribs from Trader Joe’s)

1 can of Dr. Pepper soda

BBQ Sauce (I used Trader Joe’s All Natural BBQ Sauce! It was sweet and spicy—perfect)

Salt and pepper to taste

Instructions:

Season the ribs well with salt and pepper. Then, place the rack of ribs in the Crockpot so that the meaty part of the ribs are facing the inner wall of the bowl. I’m sure it would have been very helpful to see a picture of this! Basically, the ribs will look like a circle around the bowl. Pour your Dr. Pepper in the middle of the rib circle, and then set it to cook on low for 8 hours.

After 8 hours, gently (the meat falls right off the bone, so be careful!) remove the ribs from the Crockpot and place on a foil lined cookie sheet. Cover with BBQ and broil on high in a preheated oven for 5-7 minutes, or until the sauce begins to caramelize.

Remove and serve with whatever your heart desires (I did fresh tomatoes and zucchini in a homemade dairy-free ranch) and a little more BBQ sauce on the side! Enjoy!
