{Easiest, tastiest EVER} Grilled Tri Tip

This past weekend, I had the pleasure of visiting the Midwest! I’m not sure if I have any readers out there in the beautiful, green, wholesome middle of the country, but I fell in love. There were trees for days and the highways were flanked with fields of wild flowers, corn, and farm animals. I have never seen fields of wild flowers before! I’m not sure why I resisted the urge to get out and pick some. Next time I will for sure. While my eyes were feasting, trust me, so was my stomach. Oh, boy. I’m doing a little detoxing this week, but I am not sorry one bit! I got myself a big box of Lactaids and enjoyed frozen custard at Culver’s and Michael’s, and cheese curds from the local farmer’s market, and more cheese everywhere else. Yum. I was also very happy to find many places, in Minneapolis and in Madison, which had gluten free options, so I was in heaven. We even found a terrific local coffee shop, Colectivo, with pour over coffee—totally legit!

But, even though the food was fabulous, I mostly enjoyed spending time with family. I got to see my big brother Mike in Saint Paul. He treated us to a fabulous dinner in an amazing and beautiful restaurant called W.A. Frost. We sipped wine and scotch, had an amazing meal, and caught up on life. I never grew up with much family around, so I deeply treasure these moments that I get to spend with them. On the rare occasion I do get to see my family members, it makes me feel grounded, connected, and loved. I can only imagine how it would feel to see them more often, and I wonder if other people who live near their family feel the same way.

Then, we got to spend a few days with Colin’s family! His cousin Kristen got married in a lovely ceremony at a monastery in Madison, WI. We had a fabulous time and then were off the next day. This trip was much too short! We look forward to going back and spending more time with family and exploring more of the Midwest!

This tri tip is perfect for this post, as I don’t think I have ever had as much red meat as I’ve had the past 2 weeks! It’s been wonderful. This recipe is not only CRAZY TASTY, it is also CRAZY EASY! My mom’s husband has made it for years and years, and I we enjoy it often. You honestly don’t need to add anything else to the meat. Meat. Salt. That’s it. The rock salt has such a clean flavor, and it really brings out the flavor in the meat. Make it and let me know how much you love it!

{Easiest, tastiest EVER} Grilled Tri Tip

Serves 6-8                             

1 tri tip roast, 2-3 pounds

1/3 cup or so rock salt (you want a nice even layer)

Instructions:

Place your tri tip in a shallow baking dish and cover the top with your rock salt. You want the whole top completely covered. Press the salt in as well as you can. Get the sides as well. Leave the meat out prior to cooking for at least 1 hour. You should marinate your meat in the salt covering for at least an hour, but you can do it all day if you want in the fridge. It’s good no matter what!

Heat your grill to high heat. Once ready, you will want to sear both sides of the meat for 3-5 minutes. You want to get a nice color and crust. Much of the salt will fall off, but the flavor stays!

You will want to cook the meat until the internal temperature reaches 140F, about 30 minutes. Then take it off and let it rest for 10-15 minutes, loosely tented with tin foil. This will give you great medium rare beef—is there any other way?

Slice it against the grain (so the strips are shorter, not longer). Enjoy!
