Simple Blueberry Vanilla Lemon Jam

As a culture, we are as obsessed with looking good as we have always been. Not only that, though, we want health, beauty, youth, simplicity, and happiness at the touch of a button. Can I just take a pill for that? No. But you can make this incredibly simple jam, which is also extremely healthy (thank you, chia seeds!) and yummy! It’s loaded with antioxidants, fiber, Omega 3’s, and more. You’re welcome.

Simple Blueberry Vanilla Lemon Jam

1 cup organic blueberries (or use a fruit wash)

½ teaspoon vanilla

1 small lemon, zested and juiced

1tablespoon chia seeds

In a small food processor, place blueberries, vanilla, and lemon juice + zest. Pulse a few times to your preferred consistency (longer if you want it chunky, more if you want it smoother). Then, scrape all those fresh flavors into a glass jar or Tupperware container. Add the chia seeds and stir. Leave in the fridge over night—or a few hours, really. It will thicken up all on its own!
